A refreshing coffee ice cream cake to keep your head cool this summer
Summer is in full swing and there is nothing better than a delicious, cooling treat to beat the heat. If you are a coffee lover, then this coffee ice cream cake is just what you need! Made with freshly brewed coffee from a Moccamaster, this ice cream cake offers a perfect balance of rich coffee flavours and creamy textures. Follow this simple recipe and enjoy a refreshing and flavourful treat.
Ingredients
- 1 litre vanilla ice cream
- 250 ml strong coffee, brewed with a Moccamaster
- 200 g dark chocolate
- 200 g biscuits (e.g. sponge cake or speculoos)
- 50 g butter
- 100 ml whipped cream
- 2 tbsp sugar

- Springform or cake tin (approx. 23 cm diameter)
- Baking paper
- Saucepan
- Mixing bowl
- Spatula
Method of preparation
Step 1: Making coffee with the Moccamaster
Start by brewing strong coffee. Use your Moccamaster to brew 250 ml of coffee and use one or two extra scoops to make it a little stronger. Let the coffee cool completely before continuing.
Step 2: Preparing the Cake Base
- Put the biscuits in a resealable plastic bag and crumble them finely with a rolling pin. You can also use a food processor.
- Melt the butter in a saucepan over low heat.
- Add the melted butter to the biscuit crumbs and mix well.
- Line the bottom of the springform pan with baking paper. Press the biscuit mixture firmly onto the bottom of the tin. Place the mould in the fridge to stiffen.
Step 3: The Coffee Ice Cream Mixture
- Melt the chocolate au bain-marie until the lumps are gone.
- Remove the vanilla ice cream from the freezer and let it stand for a few minutes to soften.
- Add the cooled coffee to the soft ice cream and mix well with a spatula until everything is evenly mixed.
Step 4: Building up the cake
- Remove the springform pan from the fridge and pour the coffee mixture over the biscuit base. Then add a layer of the melted chocolate, followed by another layer of coffee mixture. Repeat until the mould is filled and finish with a layer of coffee mixture.
- Place the cake in the freezer and let it set for at least 4 hours, or until the cake is completely frozen.
Step 5: Serve and enjoy!

Tip: Take the cake out of the freezer a few minutes before serving to soften slightly, making it easier to cut. Cut the cake into nice points and serve immediately.
